This six-course celebratory menu highlights the intricacies of Chinese Executive Chef Liu Ching Hai’s mastery of the wok and cooking techniques. Specialising in classical Cantonese and focused on the use of fresh seasonal quality ingredients, Executive Chinese Chef Liu Ching Hai offers weekly rotational of the menus featuring his signature wok-fried dishes, traditional dim sum delights and a selection of nutritious double-boiled soups. Available for both lunch and dinner.

Liu Ching Hai, Executive Chinese Chef

Hailing from Hong Kong, Chef Liu is a veteran with over 20 years of experience in fine Cantonese cuisine. With the “aim to use the freshest and highest grade quality ingredients to create authentic yet innovative dishes”, expect a uniquely memorable dining experience at Summer Palace.

Trained under Master Chinese Chefs Fok Wing Tin and Peter Tsang, Chef Liu’s repertoire of delectable Cantonese cuisine has been savoured by international dignitaries, diplomats, Hollywood and Hong Kong celebrities; leading him to be recognised for the “Best Culinary Skills Award’’ in a competition hosted by the Hong Kong Tourism Association. Chef Liu’s cooking philosophy stems from bringing diners Canton comfort using the freshest quality ingredients, presenting innovative creations with nuances of traditional Cantonese flavours.
